Righteous Rainbow Breakfast Bowl

We call this one our "breakfast of champions" because it packs a super nutritious veggie and protein punch that will keep you going for hours.

Restaurant style 10 minute eggs: Bring a small saucepan of water to a boil and using a ladle lower your eggs into the boiling water. Turn down the heat to medium low and allow eggs to simmer for exactly 10 minutes. You're looking for a gentle boil so that the eggs are not bouncing around. After your 10 minutes are up take the pan over to the sink and empty the hot water. Then run cold water over your eggs until they are cool enough to peel. The eggshell should come right off and leave you with a perfect boiled egg! The yolk should have a slight custard center as pictured above.

Assemble your Bowl:

Start with cooked grits, cauliflower rice, traditional rice or whatever you like. Zoodles would be great here too! Add the following:

Sliced avocado

Handful of Righteous Greens Righteous Rainbow blend

10 minute egg sliced in half

salt and pepper to taste, optional squeeze or lemon or lime on the microgreens
