Lemon Garlic Vinaigrette

Bursting with fresh citrus flavor, this is our favorite go-to vinaigrette for a lightly dressed tangle of microgreens served with a lunch bowl or dinner entree.

2 garlic cloves, pressed

1 tsp lemon zest

1/4 cup freshly squeezed lemon juice (1 large lemon)

Small squeeze of local honey

1/2 cup Olive Oil

Pinch of sea salt and a few grinds of pepper

Combine garlic, lemon zest, lemon juice and honey in a small bowl and whisk until combined. While whisking, slowly stream the olive oil into the vinaigrette until emulsified. Season to taste with sea salt and pepper.
